Oh No! Our Pickles are Bubbling?
Bubbling Pickles, Batman!
A few weeks back, we canned a bunch of pickles from our garden and while they were sealing, I picked them up and put them away in storage. I didn't realize they needed to cool and seal completely before moving them, so there was a chance they may not seal.
Fast forward to today, we inspected the pickles and found one that didn't seal and looked cloudy. Opening the lid, there was a gas release and the pickle juice was BUBBLING!
Check out the video below:
Does anyone know what happened here?
The brine was very salty and it was heated to high temperature, we're not sure how fermentation could have even begun! The only thing we could think of is that the pickle cucumbers were unwashed, so some natural yeast may have been introduced into the jars.
My wife did discard this milky jar of pickles, before her husband tried to eat all the fermented pickles. Yum.
Bless the Most High!
Thank you!
You're welcome!
Because it was probably not completely closed it started to ferment because it also contains sugar.
The result is carbonic acid and alcohol.
I cannot give a guarantee, but if it does not smell abnormal I would assume that it is edible without problems.
We threw them away a few days later and they didn't smell as good as when we first opened.
I think it could be related to the natural Sugars in them that can lead to fermentation I believe
Yes, that's likely.
