Butter Chicken

Recipe Servings: 5

Ingredients

one cup butter
one onion
one tbsp garlic
one can tomato sauce
three cups heavy cream
two tsp salt to taste
one tsp cayenne pepper
one tsp garam masala
one and half pounds skinless, boneless chicken breast
two tbsp vegetable oil
two tbsp tandoori masala

Instructions:

Dissolve a tbbsp of butter in a skillet over medium flame. Mix in onion and garlic, and cook slowly till the onion caramelizes to a dark brown, about fifteen minutes.

Dissolve the remaining butter in a saucepan over medium-high flame along with tomato sauce, heavy cream, salt, cayenne pepper, and garam masala. Bring to a simmer, then reduce flame to low; cover, and simmer for thirty minutes, mixing occasionally. Then mix in caramelized onions.

Toss cubed chicken breast with vegetable oil till covered, then season with tandoori masala and spread out onto a baking sheet.

Bake chicken in preheated oven till no longer pink in the center, about twenty mins. When done, put the chicken to the sauce and simmer for five min. before serving. Enjoy!
