Chocolate Tortellini/Pear Sauce
Tortellini
Ingredient:
Plain flour - 135 gm
Cocoa powder - 3 tbsp
Chocolate essence - 1 tbsp
Ricotta cheese - 75 gm
Icing sugar - 3 tbsp
Sweetened chestnut puree - 100 gm
Roasted & ground blanched almonds - 30 gm
Egg yolk - 1
water - 2 tbsp
Method:
Step 1: Into the food processor combine the flour, cocoa powder and sugar, now add the chocolate essence, egg and water
continue the process until the mixture forms in a ball, now with floured hand take out the dough from the processor and form it well into flat square. Take the Cling film and wrap it and keep it for half an hour to refrigerate.
Step 2: In the small bowl add Ricotta cheese, chestnut puree, egg yolk and almonds blend it all together.
Step 3: From the fridge take out the dough now lightly roll out the dough on the floured surface, with the help of cutter
cut into rounds, on each of the rounds place 1 tsp of the filling, on the surface spray the water and into half fold each round and seal with the help of pinching the edges, like the pocket pull the two points towards with the pinch together each other across, Turn on the flame take an large pan add water, make the flame high, into the boiling water drop the tortellini cook it for 4-5 minutes.
Pear Sauce
Ingredient:
Pears - 5
lemon - 2
Sugar - 150 gm
Wine bottle - 1/2
Cinnamon stick - 1
Method
Step 1: Take the medium bowl filled with half(bowl) of water, squeeze the lemons.
Step 2: Peel the pears and pare out the core, into the lemon syrup put the halves, turn on the flame take a pan
add half bottle of wine bring it to boil, add sugar, cinnamon stick and pear juice, add the pears to the mixture cover the pane and cook for 10-20 minutes until the pears be pierced with the help of the fork, let it be cool the pear syrup.
Ready to serve with chocolate tortellini. Decorate with lime.
