Sunday Cooking : Chicken with Veggies
Sunday I have the time to do something that I really enjoy and this is cooking. And since I have plenty of time I cook something more complicated than put everything in a pan and wait...
So, today I made chicken with veggies. The original plan was pork , but yesterday I was late and my butcher had only a chicken breast.
But, an excellent chef like yours trully isn't discouraged and cooks with whatever there is available. First, we marinate the chicken.
I used salt, pepper, olive oil and soy sauce. Leave it a couple of hours to absorb the flavors. Then, we transfer the chicken to a hot pan and give the chicken some nice color. In the end , add sliced onion, garlic and some butter for extra flavor.
Now it is time to add the veggies. I got a mixture of frozen and sliced vegetables and I added some mushrooms.
Season and let them cook.
I didn't cook them for long because I wanted them to have a little bit of bite. The end result you can see in the first photo.
I was proud of how tender and juicy my chicken was. And I have two more servings so I don't have to cook tomorrow and on Tuesday.

We are not used to have tea with our meals here in Greece, but sounds like a cool idea.
