Appletouille - Apple Ratatouille

Hi friends,

Me again back with the variation of Ratatouille but this time I made the fruit version, using apples as the main ingredients. Maybe some of you already knew that I've got my new mandolin slicer two days ago so I've been having fun slicing loads of things with my new baby since then, but not my fingers of course :-D

This simple dish is perfectly served with ice cream or just as is or with ice cream :-D It's summer time so I'm sure that many of you have some stock of ice cream in the freezer. Now, let's talk about the recipe, shall we?

Ingredients

  • 6 to 7 apples from different variety, I used: Granny Smith, Golden and Pink Lady.
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon powder
  • a pinch of salt
  • 1 tbsp butter

Methods

  • Using mandolin or knife, slice all veggies into 2 mm thick. Mine is 3 mm and it was a little too thick. Set aside.

  • In a sauce pan, mix heavy cream, sugar, vanilla, salt and cinnamon powder. Bring to boil over medium high heat. I forgot to add in cinnamon powder at this stage so I sprinkled it when it's cooked.

  • Pour the "sauce" into the bottom of a ceramic baking dish. Spread evenly. Preheat oven to 180°C. Make a stack of the apples and arrange a few stacks at a time into baking dish in a circular motion. Sprinkle the butter over the apples.

  • Bake for 30 minutes. At this time, your kitchen begins to smells good ;-)
