Cranberry Mousse with Semolina
INGREDIENTS:
• 300 g of cranberry
• 250 g of sugar
• 100 g of semolina
PREPARATION:
1. To mash Cranberry.
2. Add 100 ml of boiled water to the wrinkled berries and squeeze out the juice.
3. Pour the squeezes with water (300 ml), add sugar and boil, then drain the broth.
4. In a strained broth add semolina and cook on low heat, stirring.
5. You should get something like thick porridge.
6. When the porridge cools down, add juice to it and shake well. Weight will lighten and increase in volume.
7. Finished mousse to spread out in portioned molds and put in the refrigerator. You can sprinkle it with grated chocolate and decorate with berries
