Few days ago I watched a documentary on Ramen which made me crave a bowl of hot ramen. So I decided to head over to this place near my house in Soho. This was the first time I've ever been to a ramen joint in London. Wow holy fuck... its amazing
I ordered a "Tonkotsu Ramen" and it was the shitttt. the broth was not too salty but super tasty. The chashu was soft and easy to munch and the quality of the noodles was just on fleek. You could simply taste the bone marrow used to cook the broth, so juicy and in its prime.

"Tonkotsu Ramen" originated in Fukuoka japan, originally designed as fast food for labour to eat, however nowadays most ramen shops use hours each day to cook up a perfect broth. The broth consists of adding pork bones and then once its cooked, it will be served alongside hard cooked ramen. Tonkotsu broth is easy to make but it's hard to master. In order to master the technique to make the broth thick, creamy, tasty is not that easy, it is like search for the holy grail of noodle soup broths.
