Winter Carrot Harvest And Bed Prep/ Looking For Carrot Canning Recipes
It was time to pull the carrots out of mother natures refrigerator. Ended up getting about 15 pounds of carrots out of an 8 by 4 bed. Made a post about a month ago on DTube about what I do with my carrots in the winter and how I planted them. You can find that video here.
This is the bed, made out of recycled wood, the carrots were growing in. After clearing the carrots adding some compost and about two inches of leaf mold it is ready to become part of this years herb garden. If you are interested in seeing how I make leaf mold here it is.
In this group of beds this year we will be doing a polyculture of all different type of Herbs for our CSA and curb side stand. The garden bed with the windows on it are radishes that have been growing over the winter. They will be next to harvest.
I will be canning most of the carrots that were pulled today. But I have never canned carrots before. Instead of going on Google and searching for a recipe I am asking my fellow steemit peeps. If you have a sweet carrot canning recipe that would be awesome! They are my favorite! Thank you in advance!!

Ive always cold packed them, and used the same recipe as a cucumber one. :) theyre great!
