Veganuary Bento #2!
Good morning Steemians!
Yesterday the #Bentoboxes were a success! The kids were pleased and two out of three were actually full after lunch, which never happens for school lunches!
I, on the other hand, was too full, I packed too much! So today I filled two side cups instead of three and did not add any crisps.
A spinach wrap with chopped asian salad is the main, on the side are snow peas and bell peppers.
Something I didn't know before #veganuary, I like yellow peppers more than I like green! Actually I'd never eaten yellow before. 😲
The wraps say allergen warning on the packaging that they "may contain traces of milk". I was okay with that because it typically means it was made in a factory with other things that contain milk. It's a liability "just in case".
The salad is one I do a lot. Kale, romaine, cabnage, carrots, almonds, onions and sesame vinagrette. It's a favorite and now it's in my lunch box!
I also brought oatmeal and a banana for breakfast. I spend 8-9 hours at work each day, one meal isn't enough to maintain energy levels where I need them to be to get through the day.

So far no meat or dairy here! Lots of soups haha. I have made coconut lentil twice this week. It is a learning curve for sure!
