STEEMIT CULINARY CHALLENGE # 29: Shrimp Dumplings 虾饺
Thanks to this week's theme "brunch" selected by @kotturinn, and I have the chance to share with you "Chinese brunch". This is actually a very popular brunch in the south of our country. You can eat it from 10:00 am to 3:00 pm in any teahouse.
Shrimp dumplings is a traditional snacks in Guangdong province. It is Guangdong cuisine which belongs to one o the Eight Chinese Quisines and was created in the early 20th century in the suburb of Guangzhou, a home style teahouse in Wu village. And has a 100 years of history.
At that time, Wu village was a very prosperous, beautiful place on both sides of the river where there are abundant fish and shrimp in the local area. So they made dumplings with shrimp, taste is very delicious!
So today I'd like to share with you the shrimp dumplnngs, this is my favorite dish when I go to teahouse and have to order it.

Ingredients for the filling:
- shrimp 200g
- minced pork 60g
- minced carrot 10g
- minced ginger 2g
- pepper 1g
- salt 5g
- vegetable oil 20g
Ingredients for the wrapper:
- wheat starch 100g
- cornstarch 20g
- hot water 40-50g
- salt 4g
- vegetable oil 10g
Instructions:
Place wheat starch, cornstarch, salt in a large mixing bowl.
Add hot water to the bowl gradually, in the mean time you need to stir it with a pair of chopsticks until it looks like cotton, cover the lid for 5 minutes.
Add vegetable oil to the bowl and go on kneading dough until smooth.
cover it and set aside.
Wash shrimp and use a pair of scissor to remove its head, shell and shrimp line. wash shrimp again and dice it, place it in a large bowl.
Add a little minced carrot
Add pork, ginger, salt, vegetable oil, pepper to season it. stir and mix well.
the filling is done.
Take the dough and cut it into many pieces.Use a rolling pin to roll it and form a round shape.
put the filling in the middle of it and fold it. one by one.
Heat a steamer, when the water is boiled, place these dumplings in the steamer and cook it for 5 minutes. you need to place some pieces carrot in order to prevent stick together.
So the delicious shrimp dumplings is finished. enjoy it with sauce and kelp soup you favorite other dishes
