Sweet Potato Mini "Muffins"
I love sweet potato pie! It has always been my favorite these little muffins at 35cal each are a healthy snack that remind me of the pie that I love so much.
- 1 medium sweet potato (baked)
- 1 banana
- 1/4 cup smooth peanut butter
- 2 eggs
- dash of cinnamon and nutmeg
- 1/4 cup of mini dark chocolate chips
Preheat oven to 375F degrees. Mash the sweet potato and banana together in a medium size bowl. Stir in peanut butter, cinnamon, nutmeg, eggs, and chocolate. Pour into mini muffin tin and bake for 18-20 min. Makes 24 mini muffins.

24 of these delicious sweet potato muffins should keep me going for a few hours until dinner :)
