Rice wine (_lihing_)
lihing Is one of the most famous rice wine in North of Borneo, it made from the best glutinous rice they have. The best rice wine test is should have bittersweet test. If your lihing test is sour, that mean you are fail made the lihing.
They is many rules or taboo during the process making lihing. Women/girl in period time not incourage to involve in the making of lihing. Beside that virgin girls are welcome to involve in making of lihing process, because traditions believe virgin girl will produce best wine.
How to made lihing,
3.5kg - glutinous rice
200grm - yeast
First step
cook rice with enough air, make sure the rice is not over cooked, otherwise you will destroy the original taste of the lihing.
After cooking, transfer all rice to the bamboo tray kohintung to cool the rice at room temperature almost. The pounded yeast is sown and will be mixed into rice until evenly. after that, the rice will be inserted into the bucket / corn that has been cleaned. after inclusion, it will be closed neatly. On the bottom of the bucket will be placed slightly charcoal, it is believed to prevent the evil spirits from burying the fermentation process.
Throughout the process of making lihing, one is forbidden to say bad words, blame, swear and so forth. If this tabulation is broken, lihing quality will be affected and unpleasant.
Besides drinking in a function, Lihing is also used as a herbal cooking ingredient, especially for cooking chicken soup for pregnant women.
