My 2017: Welcoming The New Year | Our Family Tradition | Home Made Ravioli
Ever since I can remember my dad's side of the family has made ravioli for the holidays. This year we did it on New Years Day. Originating in Italy, this recipe has been passed down orally for generations. I has been tweaked and refined over the years but the mechanics are the same.
Start with fresh eggs from mom's pet chickens. Flour and Salt to make noodles from scratch.
We make 2 shapes. One that is hand formed is the traditional and another that is round stamped.
The filling is a blend of chicken and Italian sausage with venison and pork.
And 11 secret herbs and spices.
It is all cooked in chicken stock broth.
Then topped with grated Asiago Cheese.
Three generations enjoying the first meal of the New Year.
