Fried Eggs and Spaghetti

We lived in Austin Tx for about 5 years. If you have ever been to Austin, you know the motto is, “Keep Austin Weird.” I really liked living there and fit into the culture just fine. I did have some weird dreams while we were there. The first of my weird dreams inspired my book, Beyond The Greene, but that is for another blog. The dream that I want to tell you about now is when I dreamt about spaghetti and eggs.

It was a cold winters night and I went to bed around 11:00pm which is my normal bedtime. Sometime during the night I found myself cooking in a resturant. I made some spaghetti noodles then fried two eggs and whammo there it was. When I woke up the next morning I shared my experince with my wife and she gave me the, look. The look that says, here he goes again with his crazy ideas.

I asked her to make it for me for dinner that night and she did so reluctantly. This picture was of the first attempt.

If you try it you will be surprised at how good it is. Since that first time we made it, we have learned to make the eggs a little more runny. If you add some grated cheese and pepper it is even better. I did a google search and found that the dish is acutally not that uncommon and some of you may already know about it. In all honesty I had never heard about this dish before my weird dream.
I have had other bizarre food dreams since that time but I will save them for another day.
