Sustainable Feast in the Garden of Eden

It is another wonderful day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our volunteers today, cooking over fire on our rocket stoves in our sustainable outdoor kitchen! As usual, there was more than enough food for everyone, and we are happy to share our abundance with you.

Today we prepared roasted chicken, steamed sweet potatoes with cranberry sauce and cream cheese, lightly sautéed asparagus and green beans with blue cheese and sliced almonds, pomegranate applesauce, and a mixed veggie salad!


Our delicious and abundant dinner started with a big salad. We almost never use iceberg lettuce in our salads because we have a huge variety of heartier and more flavorful greens, but using it as the base of our salad today was a nice way to mix it up. Iceberg is much milder that our other greens like mustard and arugula, and it has lots of water for super hydration. 

We topped the lettuce with grated carrot, sliced mushrooms, yellow squash, red pepper, and white onion, and of course everyone is free to top their salad to their exact tastes for today!



As another side, we lightly sautéed asparagus and some crunchy green beans. Green veggies have lots of chlorophyll and many other compounds that enhance health in the human body. With a simple preparation of veggies like this, again every individual is free to dress up their serving exactly how they want! 



For another side, we made steamed sweet potatoes. If you follow along our daily sustainable feast posts, you will notice we have sweet potatoes at almost every meal while it is sweet potato season! Some of us still get excited every single time we see them on our table, because they are one of our favorite foods. We love them and are extremely grateful for the Earth's bounty. 

Plus it is another dish that can be customized in a variety of ways to give it a unique and interesting taste every day. Even though we have them at almost every meal and can prepare them any way we like, sweet potatoes with butter and salt are still way up at the top of the list of favorite Eden Knight foods. 



For today's main dish, we prepared 2 roast chickens for our crowd! They were very well seasoned with herbs, salt, and pepper, and the meat was so tender it practically fell off the bone. 



To round out today's feast, we served chilled pomegranate applesauce left over from yesterday's feast. Homemade applesauce is a delicious dish to make, and a big pot of it just tastes better and better as the flavors sit together over time! 

It was another beautiful feast shared in good company, and we all gave thanks for this amazing food reality in this amazing life we share!

We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is our indoor wood burning stove in action - it cooks our food, warms our communal space, and heats water for hot showers all at the same time!
