It is a beautiful rainy day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  

We made a delicious feast for our volunteers today, cooking over fire using our handmade earthen rocket stoves in our sustainable outdoor kitchen! As usual, there was more than enough food for everyone, and we are happy to share our abundance with you.

We made a wonderful salad, chicken parmesan, breaded squash, spaghetti with homemade tomato sauce, sautéed veggies, and even a sweet dessert tray!

We started with a curly green kale salad with sliced red onions, juicy tomatoes, cucumber, and green onion.

We boiled a pot of spaghetti noodles for the base of our Italian feast. 

Some of us topped our noodles with this dankalicious rich tomato sauce! We made this with tomatoes, onions, peppers, and lots of herbs and garlic simmered together until soft and flavorful.

For our main dish, we breaded chicken filets, baked them, and topped them with delicious parmesan cheese. We put it in the oven for a bit longer to get the cheese creamy and melty. These were a big hit with our meat eaters!

We also made a comparable variation for our vegetarians! We sliced zucchini, yellow squash, and tiny eggplants then breaded them with the same coating of egg, flour, and herbs and baked them until crispy. They had a little parmesan cheese on top too!

We sautéed yellow squash, onions, peppers, and mushrooms together for a yummy side dish.

For dessert, we served a sweet tray of cookie and brownie bites decorated with fresh strawberry slices!

It was a fantastic, hearty, satisfying, wholesome meal shared in good company and gratitude for this wonderful life. Thanks for sharing our feast with us today!
