You can leave them in all winter and just pull and eat them as you need. Just throw some mulch of sorts over top of them, such as straw, or leaves stuff like that, even a piece of 6 mill plastic will do, then shovel a path over to them and pull and eat. The longer you leave them the sweeter they taste. Just my thoughts. I pulled mine as it was an experiment.
