A Witch in the Kitchen: "Vegetables with Chicken"

Hello Dear Witches...!

I have been trying to eat as healthy and natural as possible, and I have even tried to leave aside the consumption of animal proteins, however my parents and siblings do not finish adapting to the consumption of vegetables for the most part, so I eventually eat meat of some kind, adding as many vegetables as possible.



For lunch today I craved some chicken fajitas with vegetables, but the laziness won me and I did not make the tortillas, I ended up accompanying these vegetables with chicken with a white rice, the truth is that I am perfect, and my parents satisfied with the combination, I really love to prepare these vegetables so it is a fairly quick and simple preparation, and I try to have at hand in the freezer chicken shredded for this type of occasion.



This simple recipe can be consumed without adding the chicken, which makes it perfect for vegans, is also great for when we do not have much free time to devote to the kitchen, come with me and show you how to prepare them. Enjoy! .


Ingredients

  • 300 g shredded chicken breast.
  • 1 cup chopped chives .
  • 3 finely chopped garlic cloves.
  • 4 Peppers finely chopped.
  • 1 Large carrot cut into strips.
  • 1 Large zucchini cut into strips.
  • 2 tbsp lemon juice.
  • 1 tsp ground cumin.
  • 1 Tbsp of salt.
  • 1 teaspoon of sugar






  • Preparation

    • Difficulty level: Low
    • Preparation time: 15 Minutes
    • Baking time: 15 Minutes


    • In a large hot pot add the sugar and a spoonful of sunflower oil, add the chives and sauté one minute before adding the garlic and chili, stir for a couple of minutes.

      Add the carrot and stir a couple of minutes to continue adding the zucchini, and season with salt and cumin, lower the heat to minimum and cover to let cook for about 3 minutes.



      We continue adding the chicken and we stir very well to integrate, we place the lemon juice and if they wish they can add a little vegetable broth, we cover and let it finish cooking for about 5 minutes, so that the flavors are integrated, we turn off the fire and let it rest a few minutes before serving.



      The truth is that I love the combination, the sour touch of lemon is perfect, I can even eat a portion of these delicious vegetables with chicken without any kind of companion, because it is healthy, delicious and quite nutritious. I think I would repeat it many times, because it is also very easy and quick to do.

      I would eat them with good tortillas or pita bread, and you, what would you accompany them with?
