Today I bring you a delicious dish prepared in the oven with textured soybeans, it is essential that when buying our vegetable products we choose to avoid transgenic products, Monsanto has been accused repeatedly for using glyphosate a highly carcinogenic chemical, there is an incredible variety of transgenic products, that neither vegans nor vegetarians escape from eating healthy under these conditions, evidently behind all this industry there are intentions to control the seeds that are basically the perpetuity of one of the most ancient and ancestral activities that we have, agriculture. The soybean used as the base of this rich dish is organic. Accompany me to prepare this delicious recipe.

EGGPLANTS STUFFED WITH TEXTURED SOYBEANS

My secrets INGREDIENTS

(for 4 portions):

♡ 3 Eggplants (approx. 800-900 g)

♡ 100 g fine textured soybeans

♡ 300-500 ml vegetable stock

♡ ½ onion

♡ 1 garlic

♡ 2 tbsp. crushed tomato

♡ 25 g white wheat flour

♡ 200 ml natural vegetable drink (no sugar or flavours)

♡ Breadcrumbs

♡ Salt

♡ Oregano

PREPARATION

Preparation time: 25min

Cooking time: 25min

Total: 50min

In a large pot, heat the water to boil the Eggplants.

Clean the Eggplants, cut the stem and open them in half.

When the water starts to boil, add a teaspoon of salt and submerge the Eggplants. Cover and cook for about 15 minutes or until the Eggplants are tender.

Drain the Eggplants and when they are warm empty them almost completely. Leave an edge of about 3 millimeters. Set aside the meat of the Eggplants.

Heat a frying pan. Peel and chop the onion.

When the pan is hot, add a little oil and sauté the onion. Peel and chop the garlic.

Start hydrating the soybeans. Put it in a saucepan and cover it with broth and let it cook over low heat until almost all the liquid is consumed.

When the onion is well browned, add the garlic and let it cook for 1 or 2 minutes, preventing the garlic from burning.

Now add the tomato, stir and then add the flour. Stir until the flour integrates with all the ingredients and cook for about 3 minutes, stirring regularly.

Now add the vegetable drink and let it cook until a béchamel sauce is formed. Stir regularly with a few sticks to prevent groups from forming.

When the béchamel sauce is ready, add the meat from the Eggplants, stir and add salt and oregano to taste. Add the textured soybeans and mix well.

Turn on the oven grill.

While the oven is heating, grease a dish with oil and place the Eggplants s inside and fill them. Finally, sprinkle some breadcrumbs on top.

Gratin the Eggplants and serve hot. If you want, you can accompany them with a little tomato sauce.
