Indonesian layer cake/Spekkoek

There are many recipes online how to make an Indonesian layer cake like this, but not one single recipe is explaining you in details or giving you the right amount of ingredients. Some recipes are even incomplete.

I found a couple of recipes online I liked but I made at the end my own recipe which is a combination of couple of recipes and some I added myself. Here is my recipe with pictures included:

Indonesian layer cake/Spekkoek
Duration: 4 hours ( WHAT???..... YES, 4 hours pfff)  
(A small piece of cake is already filling, so don't get shocked of the amount of ingredients inside.)

Ingredients:  
A square cake pan 24 x 7 cm. Mine i got from an Asian grocery shop.A ladle and a cake smoother   
60 large egg yolks.... Say whaaat!
640 gram of fine sugar
1000 gram of liquid butter
200 gram of flour
16 gram vanilla sugar
4 teaspoons of liquid vanilla( I use liquid vanilla of Indonesian brand Kupukupu which I bought at the Toko(Asian grocery shop), or if not available vanilla extract.
1 can of Friesche Flag condensed milk
a pinch of salt
2 full table spoon of Spekkoek spices( available at Asian grocery shop, it contains: cinnamon, cloves,anise, nutmeg,cardamom)
1. Turn oven on 180 degrees Celsius at GRILL .
2. Cover the surface of the cake pan with baking paper, cut according to the cake pan size.
3. Use a large pan to mix everything.
4. Break the eggs and only take the yolks.
5. Mix egg yolks, butter,sugar first untill its smooth
6. Add flour and the rest of the ingredients and mix again until its smooth.
7. Use a large ladle and put 1 ladle of the mix in the cake pan. make sure it is spread evenly.
8. Put it in the oven underneath, for about 3-5 minutes. I recommend to check after 3 minutes. If its brown, you can take it out. Prefent the layers to be super dark brown till black.
9. So, when its brown, you can take the cake pan out and remove bubbles with a sate stick and make the surface smooth using cake smoother and press it gently. If the layer is sticking to your cake smoother, it means the layer is not brown enough. but don't worry if one layer is too dark, or almost black. You just have to watch your timer and shorten the time.
10. repeat the steps. Always stay close to your oven. Some ovens are small and some are large. Mine is small, so the heat is closer to the cake which makes the layers quicker brown then when you have a larger cake.
I have in total about 20-22 layers which is equal to 4 hours! Here below you see the pictures of the steps.
Make sure you press after every layer is baked, or lets say, grilled, the cake with a cake smoother/


I have no idea why I have this strange bubble at the end of the cake. But hey, its all about the taste! And you can conceal it a bit using the toothpick and make it smooth with a cake smoother and press it gently.
After the cake is done, you can put it upside down on a wire rack and cool it off. After that you can cut it in slices as thick as you want. I can guarantee you that everybody will LOVE your cake! If you made this, please let me know! I am curious! This is a cake that you have to eat and to love. I can not imagine someone not liking this cake! If you have questions, I will help you. It is not an easy cake, but with my explanation above, it will be a piece of cake! :-)

We love 'spekkoek', but so far only bought ready made. Already knew that it takes a long time to cook it layer by layer, but the end result seems to be worth the effort.

Just had some Spekkoek, it tasted great, even from the store. :-)

I like Indo cooking, great ingredients with names like 'klappertjesmelk' and 'sajoer boontjes'.

I never heard of klappertjesmelk... Lol. So maybe you are more Indonesian than me :-).

Hahaha, nope, I'm a 'blanda toto', my better half is quarter Indo.

It says 'klappermelk' on the tin, but I came to know it as 'klappertjesmelk'. Kokosmilk, very nice in Soto.

I never use coconut in soto ayam soup...... I dont think it belongs in soto :-)

We even have no ayam in it. And it still tastes great. :-)
