Homemade Pizza Rolls

Pizza is well known and liked worldwide. It's one of my favorites and I'm making pizza very often but lately I found out making small changes to it makes it even better. Somehow it's a mystery what is happening with this recipe but it's true.

I am using the same dough recipe for pizza and for pizza rolls as well and pizza rolls are more delicious.

Ingredients

For the dough

  • 500g all purpose flour,
  • 300 lukewarm water,
  • 35g extra virgin olive oil,
  • 1tsp sugar,
  • 10 g salt,
  • 25 g fresh years or 10g dried yeast.

For the filling

  • pizza sauce or ketchup,
  • ham,
  • mushroom
  • grated cheese.

I'm using a mix of spelt and all purpose flour as spelt needs to be mixed, otherwise it has a strong taste and crumbles because it has less gluten.

I'm using 100g spelt and 400g all purpose flower but basically you can use bread flour, which is named differently in each country. In Romania it's 650, in Hungary it's BL 55 and BL 80 and I've seen the package labeled as pizza flour.

The Process

Add the yeast to 150ml lukewarm water, add 1sp sugar and let it rise in a warm place. It takes about 5 - 8 minutes.

Put the flour in a mixing bowl, add salt, oil and yeast mix and start kneading. Add the rest of the water and knead till you get a non-sticky dough. Ass more flour if necessary.

Cover with a clean kitchen cloth and let it rest for an hour in a warm place. It should double.

On a floured working surface knead the dough for another minute, then roll it out in a rectangle.

It shouldn't be very thick, 0.5 cm is fine.

I was using salami and ham, mushroom and grated cheese but it's fine whatever you have at home. Sweet corn, fresh pepper, chopped onion, broccoli, pineapple, whatever you have.

I was using canned mushroom as the covid-19 pandemic is limiting me, so I needed to make sure to eliminate most of the water mushroom contain in order not to flood the dough with water.

As I've mentioned, I'm using my own homemade pizza source made for my taste but you can use whatever you have or not use any.

After applying the pizza sauce (make sure not to use too much as it's going to flood the dough), sprinkle with chopped ham.

Sprinkle with grated cheese and make sure you leave 1cm space at the edges.

Then roll it up carefully. Make sure to be tight at the beginning as that's going to be the middle of the roll and you don't want to make a whole in it.

I'm using a plastic spatula to slice it as knife is not good, plus my working surface is covered with a silicone foil and can't use a knife on it.

Cut 2 cm thick slices and place ion a baking tray covered with baking sheet.

In a preheated oven bake till it's golden brown. My oven is an old one, so it took me 40 minutes at a reduced heat. It may take you much less.

The Mystery

I've been thinking of why these rolls taste better than pizza when the ingredients and the dough is the same and I can't come up with an answer. Maybe the dough in case of the rolls is not covered with sauce and other ingredients as in case of pizza, therefore it can rise and that makes the difference but this is just a supposition.
