Food - My Comfort!
This last couple of weeks, cooking is one of the things I have been doing a lot when I want to find some solace and peace, especially given everything that is going on with the world right now.
It's been a couple of weeks since I had somewhat Kenyan food, so I decided to make some rice and peas/beef stew a couple of days ago, just to have that homely feeling, even if it's just for a bit.
This is like a very common meal from my tribe, normally we have this with some rice or chapati, I decided to go with rice.
Very Easy to make.
Fry onions, once brown, add your meat, salt and pepper and let it cook in low heat.
Once it starts to dry up, add your potatoes, depending on how big they are, you can add some little water and let it cook for like 10 mins before adding in the peas, diced carrots and more seasoning according to your preference.
The rice is not that hard either.
Just fry onions, add some grated carrots once the onions brown, add your rice and let it cook until nearly drying up. Then add your sweet corn and let it simmer on low heat.
My Special Ingredients
I actually came with this from Kenya since I've often heard people complain how hard it is to get some authentic African spices abroad. Better safe than sorry right?
I got a couple more of this to last me at least another year, so I guess I am sorted in a way.
We really hold maggi cubes and Royco to high regards in Kenya. It's the most common household spice and it sure never disappoints.
As time passes by, I am thankful for the little things that are bringing me joy and comfort, one of which is good food and good company.
