My favourite Easter Koulourakia
I know it's been a while since the last time I've posted and I don't feel good about it but the last 5 days were extremely difficult for me... I've been through hell! It's crazy how things "choose" to go wrong all together at the same time. Anyways.. I don't want to jinx it but everything is getting better now...
So yesterday I decided to bake my Easter Cookies -aka koulourakia- to bring some joy back in the house and in my tummy. The recipe I go for every year is my grandma's. It's incredibly easy and delicious! I experimented once with my mum, following a different recipe and we ended up with half a kilo waterproof easter cookies. A total disaster. My grandma's koulourakia though, are perfect for dunking in your morning coffee or afternoon tea! The only downside is that they can be devoured in a blink of an eye!
The recipe
Ingredients
- 250g butter
- 10 tbsp sugar
- 2 medium eggs
- 1 tsp vanilla extract
- 500g self-rising flour
- 1 egg yolk, diluted in 2 tbsp water
Instructions
Preheat the oven to 200 C set to fan.
In a mixer’s bowl add the butter, sugar and beat at medium speed for 5-7 minutes, until the mixture is fluffy.
Then, add the eggs one by one, the vanilla extract and keep beating.
Continue by adding the flour a little bit at a time until the ingredients are combined and the dough is soft and not too sticky.
Remove the bowl from the mixer and knead with your hands until a dough is formed.
Shape your cookies the way you prefer.
Transfer the cookies into baking pans lined with parchment paper, spread with the egg wash, and bake for 10-15 minutes.
Let them cool and serve :)
