Teaching my grandaughter the New Mexico Thanksgiving Tradition of making Red Chile Pork Tamales. I am 58 years old and can not remember not making tamales for Thanksgiving and Christmas. My grandaughter is a real chef wanna be. She loves helping grandpa. This is the stuffing for the tamales. It is made from pork roast, red chile, garlic, cummin, salt, pepper corn.
