Even the mention of food makes my tongue water, the sweet scent to my nose still drives me beautiful, passionate, crazy. After breaking the rice in a tekke or machine, the small broken parts of the rice were obtained by shaking the rice - that is the food that was made by applying mostly onion-garlic, jhal-oil (mustard) to Khud Futani, sometimes with Musuri, If mixed with bark or boot dal, it becomes nectar.
The smell still lingers in the mouth. What morning-afternoon-night. If it was late to prepare the curry, my grandmother, mother, aunt, and uncle would quickly prepare this dish. Sometimes at my aunt's house, mango or onion pickles, and sour milk batter made by Dadi-Ghiah! Guys I am going memory crazy right now. With the evolution of time, this dish has almost evolved, its new version is Khichuri.
The khichuri is cooked with simple village standard sweet rice which is a combination of broken musuri-peas-chala-dals with more onions, chillies, garlic, pure mustard oil, you urban paella with rice mung dal or with ghee made by Trishna.
The khichuri will not taste good. Sometimes my mother used to soak musuri dal in water for a long time without breaking it in a machine or in a jar to make it soft and then mix it with Aman rice and cook boiled khichuri which has an unforgettable taste. Friends don't tell your parents, but you can ask your grandmother and grandmother about the little futani made in villages.
