How to make Pumpkin Pie from SCRATCH (Incredibly Simple)
Ingredients for Filling:
1 Smaller sized Pumpkin (or 2 3/4 cups of pumpkin puree)
1/4 cup of Agave
1/4 cup of Coconut Sugar
1/3 cup of milk of choice (Coconut, Almond, I used my own homemade Hemp Milk)
1 TBSP of melted Coconut Oil
2 1/2 TBSP of Arrowroot Powder or Spelt Flour
1 TSP of Cinnamon
1/2 TSP of Ginger
1/2 TSP of Nutmeg
1/4 TSP of Salt
- Follow this step only if you are making your own puree Preheat oven to 425. Cut your pumpkin in half and scoop out the seeds/ pulp. Then place on a baking sheet with a couple dashes of cinnamon. Bake for 60 min and once completed allow enough time to thoroughly cool. Then scoop the insides out and add to a processor with the least amount of water as you can to get it moving.
- Place all the ingredients listed above into a mixing bowl then use a handheld mixer to sort of whip everything together.
- Taste and adjust seasonings accordingly and taadaaahh. It’s that simple.
Ingredients for Crust:
5 TBSP of chilled Coconut Oil
1 1/4 cup of Spelt Flour
1/4 TSP Salt
5 TBSP of Cold Water
BEFORE starting make sure you put your 5 scoops of oil in the fridge along with 5 TBSP of water
- In a mixing bowl, add the spelt flour and salt then mix them together.
- Start adding your scoops of Coconut Oil but when combining with the Spelt flour use a fork to just mash/incorporate them together.
- Start adding small amounts of the chilled water until the dough starts to come together.
- A looser dough should form and once it does, bring the dough onto plastic wrap in order for you to shape it into a thicker disc to chill for at least 30 min.
- When shaping the dough, place between two pieces of Parchment Paper to roll out. If it cracks, it is OKAY, you can fix that once it is in the pan! :)
- With your dough on one piece of the wax paper, get your pan on the exposed side and flip! It’s so easy I promise!
- After placing, start using your finger tips to shape the dough to your pan, rip of sides that are too long and to spots that are too thin or need more. Try to avoid heating the dough too much before oven time.
- EXTRA but you can add crushed walnuts on top! adds a great touch.
- Then pour your filling in and bake for 65 min!
- Once baked, allow enough time to fully cool :)
