Cajun Chicken and Veggies in Southern Bean Slop with Toast and Strawberries [ Original Steemit Recipe & Photos ]

in #cooking8 years ago

Come right on down Everyone, and grab yourself a bowl of my unique Cajun dish. I made so much I could feed a tribe.

For this you're going to need

  • Bag of cajun style bean soup mix
  • Water
  • Big pot
  • Pan
  • Veggies of your choice
  • Chicken
  • Curry and turmeric
  • virgin olive oil
  • Butter
  • Bread (optional)
  • (1) tangerine
  • (1) cup of orange juice
  • Strawberries (optional)

Here's some of what you need:

Get that big ol pan ready for the stovetop.

Throw in your beans (leave a qtr bag) with some olive oil, and water. Turn it onto high to get to a boil, but then back to 4 when boiling.

Yeppers.

Yepp yepp.

Now get your chopped up veggies ready. I have mostly baby green leaves, some cherry tomato, and sliced tomato, some onion, cucumber, and corn on the cob.

After while just boiling the beans it should look like this.

Lets perty it up a bit and add the cajun spices that comes with the beans, add a table spoon of curry, and a table spoon of tumeric. Add a teaspoon of garlic power and stir it all up.

Add some butter to this hot mess - wooo weee this is gonna be good.

Now, get that chicken that's been thawing out ready.

Add it to the pan and add some of the juices you got cookin your bowl. Don't turn anything on, just let it sit for a few minutes.

Add some orange juice to your bean slop... you heard what I said. Poor in about a glass...

Throw in your greens into the pot. Stir them in.

Mix them up good. Turn on your chicken to medium high then continue to stir your beans.

After a while when chicken and sauce are evaporating, add to the mix tangerines.

Hope that pot of bean slop is ready, because we're going to be adding final chicken touches...

When chicken is cooked all the way down and you singed each side as desired then quickly pour into the bean batch.

Poor it in and mix it up.

Get your sides ready like toast with butter, and strawberries.

This was so good. The batch will last me for days, but it will be a quick way to make something while working on my Steem blogs.
