Cooking@HOME - Pumpkin soup with ginger
I really like to cook at home. It turn off my brain, until I only concentrate on the food.
It is not a complex food recipe.
It really reminds me to the Christmas times.
Ingredients:
One big pumpkin
1 ginger
ground clove
ground nutmeg
pepper
thyme
First I cut the pumpkin to eight pieces, and put some thyme and olive oil to the top
I put to the oven at 190 degree for one hour
I put the inner part of the pumpkin to the turmix, and mixed it with some water.
I sliced the ginger to the pumpkin soup, and mixed with the additional ingredients.
For the topping I mixed bacon and pumpkin seed. Heated a little until the bacon turned crispy.
For second course we made steak with mushroom and green pea cream
I loved!
Place the pumpkin, shallots, ginger and some oil in a large saucepan and sauté until soft. Add the stock, coconut milk and chilli powder. Season, then bring to the boil and simmer for 40 minutes. Blitz in a food processor then serve with the fresh herbs, lime juice and a splash of coconut milk.
