Ingredients:

2 cups grated cucumber (squeeze out the water content, and keep it aside)

2 cups rice rava (flour)

1 cup grated coconut

3 cups jaggery

1 teaspoon elaichi (cardamom) powder

1 tablespoon ghee (clarified butter)

Few cashews for garnishing

Preparation:

Add cucumber water to rice rava , jaggery , grated coconut, elaichi powder and mix all the contents- in a pan.

Then cook (for about 10 minutes) till the whole mixture thickens.

Then grease a flat plate (with ghee), add the above mixture and steam cook - till a toothpick (or knife) when inserted comes out clean.

Garnish with cashew nuts.

Let it cool for about 3 hours.

Enjoy the Goan cucumber cake!
