Crispy Potato fries with baked beans and vegetables
Many people think the vegan diet is fancy, or you have to have a gourmet chef living at your house so you can eat a vegan diet. I've been eating vegan meals for nearly 4 years now and I've found a lot of ways to eat simply and quickly.
This is one of my go meal ideas for lunch or dinner. It really is so simple, I'll explain what you need and how I made it below. I will use the amounts I used below, but you can increase or decrease to suit you.
Ingredients:
- 700g White potatoes, peeled or unpeeled (depending on preference)
- 1 Can of Baked beans, reduced salt, or canned beans of choice
- 150g frozen Green beans or green vegetable of choice
- 150g Frozen Sweetcorn or peas if preferred (personally I don't like peas)
- Seasoning of choice for potatoes (I used paprika, garlic powder and onion powder)
Directions
- Preheat oven to around 225c
- Whilst oven is warming, clean and chop or peel and chop the potatoes
- Add desired seasoning and then Place onto baking tray and add to oven for around 40 minutes or until crispy
- When the potatoes are nearly ready cooking, steam or microwave your frozen vegetables and cook beans
- Once all food is ready, serve and enjoy!

I love simple meal ideas like this, because I tend to overcomplicate things with my cooking, and end up spending a lot of time, when it can be as simple as you show here. And delicious too. Good balanced combination. And of course your transformation is extraordinary, more impressive than High Carb Hannah's! You must have had some healthy diet with a lot of raw food and with little oil

I don't know if i would ever be able to swallow that but i definitely admire your weight loss. That was indeed a great feet to achieve. I eat a lot of vegetable but i like them cooked. Can't eat raw. Tried once and ended up with stomach pain.
Do you mean the big portion? If not just make it smaller :) As for the vegetables I cooked them, I didn't eat them raw, I'm a big fan of cooked veggies.
