Blockchain Bites // Creamy Chipotle Dip Recipe - Perfect for Summer BBQ's!

Hi Friends!

My absolute guilty pleasure is chips and dip. Since I've been trying to eat healthier - this has been presenting a bit more of a problem! There is a grocery store close to me that makes a creamy chipotle dip that is to die for. Unfortunately, it is full of gross ingredients like food coloring and soybean oil.

I have been a on a mission to recreate the recipe and I think I finally have it! This is probably my fifth attempt making it. Each version, I have shared with people and they have all raved about it...but I think I finally have it down to a science!

If you are heading a to a summer BBQ, this spicy and creamy dip will be eaten up in no time. I think it goes great with beer and margaritas too.

The Recipe



I personally like to have a couple dips that compliment each other if i'm doing a spread. I like to make guacamole, salsa, and this dip as a trio of flavors.

I'm not saying that this dip will be healthy or low calorie in any way - but it will be free of gross preservatives and low quality ingredients!

Creamy Chipotle Dip


  • 1 block of softened cream cheese (yeeeaaaahhh....get it)
  • Juice of half a lime
  • 1/2 cup full fat sour cream.
  • 1 TSP onion powder
  • 1 TSP garlic powder
  • S & P to taste
  • 2 TBS chipotle peppers in adobo sauce
  • 2 TBS chopped fresh cilantro
  • 2 TBS chopped fresh chives or green onion

Directions



Start by mixing together the cream cheese, lime and sour cream. It is very important for the cream cheese to be softened in order to blend easily. If you are still getting lumps - you can throw it in a blender or food processor and give it a couple spins.

Next mix in the seasons - onion, garlic, salt and pepper. Next, add in the chipotle with adobo sauce. Beware, this stuff is pretty spicy, so you may want to go slow and increase with your flavor preferences.

Lastly, mix in the cilantro and chives and you are all set! This is one of those dips that tastes better after sitting in the fridge overnight. If you have the time to make it the day before - I would recommend trying that. It still tastes great day of if needed though!

For those who are curious - the chips I've been eating are Siete Grain Free Chips. They are made with cassava root and avocado oil, so they don't feel quite as heavy as a traditional corn chip.
