Wrapping Durian Pancake

Ingredients

250 grams Flour
2 Eggs
3/4 teaspoon Salt
550 ml thick Coconut Milk
250 ml chill Whipped cream
1/4 teaspoon of Pandanus paste
600 grams flesh of Durian , crushed


Making Steps

In a medium bowl, whisk salt and flour, add in eggs one by one, whisk until blended well, pour the coconut milk slowly until the dough does not clot, last one add in the pandanus paste.

Heat a sticky non-stick skillet (24 cm diameter) over low heat, spread with margarine flatten slightly, pour 50 ml of dough over a pan, flatten to form a thin pancake, cook about 2 minutes, do it until the dough runs out.

Take a pancake, place 1 tablespoon whipped cream in to pancakes flatten, add 2 tablespoons of durian over whipped cream, fold the pancake just like a sealed envelope. Store in the refrigerator until it is quite dense and serve while cold.
