Homemade Chicken Tortilla Soup
Hello steemits, here is a recipe you might want to try on this cold winter day. It is very nutritious and it also tastes delicious.
Ingredients
- 5 small boneless chicken breasts
- 1 medium onion
- 1 small green pepper
- 1 ( 10 ounce) can of diced tomatoes with green chillies
- 2 (12 ounce )cans of petite diced tomatoes
- 1 (12 ounce ) package of frozen corn
- 1 1/2 teaspoon cumin
- 1 teaspoon of chilli powder
- 1/2 teaspoon of cayenne pepper ( optional you can add more if you like it hot and spicy)
- 4 bouillon chicken cubes
- 2 Tablespoons corn starch
Directions
Using a large cooking pot, add the 5 chicken breasts in 4 1/2 cups of water.
Cook on medium heat until they are completely cooked. While the chicken is cooking dice up the onion and green pepper.
When the chicken is done, take the chicken out of the water and remove the chicken from the cooking pot. Keep the water in the pot, and set it aside. Dice up the chicken.
On low heat put the cooking pot back on the burner, and add the chicken, onion, green pepper, diced tomatoes, chicken bouillon cubes, diced tomatoes with green chillies, cumin, chili powder, and cayenne pepper. Using a cup, add the 2 tablespoons of cornstarch with a little bit of water stir until there are no lumps, making a paste. Add to the cooking pot with all the other ingredients. Stir until everything is mixed. Cook on low an hour. You can put it in a crock pot. Yields 10 , serving size is 1 cup. 104 calories for serving size. 1 gram of fat per serving. Serve with mexican cheese for the topping, and add tortilla chips.
