Low Carb Fried Chicken - Keto Friendly!
Are you on a low carb diet and finding it hard to resist the temptations of unhealthy choices? You don't have to resist those temptations, just find substitutes! This low carb fried chicken was absolutely delicious and simple to make.
Ingredients
-chicken breast
-almond flour
-cooking oil
-eggs
-seasonings of your choice
That's literally all you need!
Below is a basic walkthrough of the preparation. I simplified it as much as possible with the assumption that you guys have a basic understanding of how to cook.
Preparation
Slice about 1 pound of thawed chicken breast to desired sizes for frying.
In a large bowl, pour out 1 cup of almond flour, adding your preferred seasonings as well (lemon pepper, garlic, and seasoned salt in my case)
In a separate bowl, crack and mix 3 eggs to be used for batter.
Place cut chicken breast into the bowl of eggs to begin soaking.
As chicken soaks in the eggs, fill a large skillet about 1/4 full of oil and begin heating.
Begin transferring your egg-battered chicken into the flour to prepare for cooking.
Now throw it in the skillet and prepare for an amazing guilt free meal!
The ENTIRE plate of chicken you see above contains only 16g of net carb. So enjoy!

Super delicious! Not QUITE as crispy as regular fried chicken but other than that I could tell no difference. And the crispiness issue could have been due to my cooking. 1st attempt is always a little rough lol

I've been building up quite the arsenal of keto friendly meals that taste like a cheat meal lol. It's very helpful in staying on track when you can treat yourself to food that "feels" like it wouldn't be allowed.
