Rice Cake
Can make up to: 24 servings
INGREDIENTS
one (16 ounce) box sweet rice flour
one cup canola oil
two and half cups milk
one and half cups white sugar
one teaspoon baking powder
three eggs
half (18.75 ounce) can sweetened red bean paste
two tablespoons toasted sesame seeds
PROCESS
Combine rice flour, canola oil, milk, sugar, and baking powder in a bowl. Mix in the beaten eggs. Pour the mixture into the baking pan. Drop small spoonfuls of the red bean paste into the flour mixture about one to two inches apart, making sure that the red bean paste is coated by the flour mixture. Dust with toasted sesame seeds.
Bake in the 325 degrees preheated oven till a toothpick inserted into the center comes out clean, about fifty five minutes. Cool in the pans for ten minutes before removing to cool completely on a wire rack.
