Phở Thìn is a small, alley phở joint near Hoàn Kiếm Lake. They only make one thing, beef phở. You can get it in small or large, and you can add an egg yolk. It has to be among the top 3 phở in Hanoi. There are not a lot of seats and you will have motorbikes driving right in front of you while you eat. That kind of adds to the charm.

The phở broth is light, but you can taste the beef flavor. There are different cuts of beef in the phở. One of the cuts is raw when they pour the broth over it and cook it slightly, but it stays raw enough that it’s not chewy. The bowl is full of perfectly cooked noodles and topped with tons of green onions. Amazing!
