Veggie Stuffed Mexican Bolillo Bread ~ Vegan
Here in Mexico Bolillos are the most popular breads eaten. They are in the shape of a football. If you want bolillos you can just go to the smallest store anywhere that sells drinks and food, and there will be bolillos.
Today the bolillo man came yelling on our street. He had the typical big basket full of bread on his head. He yells very loud, "bolillos!!" It is very irritating if you don't want any but if you do then you are happy to hear the call. I am from Canada so I'm not used to hearing so many people shout outside my door. It does come in handy sometimes.
I forced myself to be happy to hear the call and went to the front of the house and got some. I limit the amount of white bread I eat but it has been over a week so I caved in and decided to make some sandwiches with some fresh items that I had.
I shredded some jicama, carrots, radishes and cucumbers.
I made a sauce with tomato, avocado, garlic, hot pepper, salt lime juice, and cilantro. It was thick enough to spread on the bread.
And a sandwich is built!
The great thing about eating a fresh veggie sandwich is that you don't feel like going to sleep after.
