Vegan Teriyaki Cauliflower

We were just about to make lunch today and the power went out. Uggghh. I had a plan but I had to change it.

We just happen to have a camping stove that we got to use at the parks when we have a picnic, which we may not be able to do unless there's a miracle and they set us free. There are small parks nearby but they are not nice.

The stove is a great back up but we weren't sure if the butane was enough to do anything. We took our chances.

It was going to be a quick operation since it was looking like possible showers outside.

Teriyaki cauliflower

  • 1 head cauliflower
  • 1 1/2 cups chickpea flour
  • 1 cup vegan yogurt

Chop cauliflower into bite size pieces. Coat with yogurt. Toss with chickpea flour.

Teriyaki Sauce

  • 1/2 cup soy sauce
  • 2 cloves garlic
  • 1 teaspoon minced ginger
  • 1 teaspoon sesame oil
  • 1 teaspoon ketchup (I added this but it's not usually in Teriyaki sauce)
  • 2 tablespoons brown sugar (I used maple syrup)
  • 1 tablespoon rice wine vinegar
  • 1/8 cup water
  • 1 tablespoon cornstarch
    (I added 2 hot chilies to it)

Combine ingredients.

I went ahead today and coated the pan with more oil than I usually use. Around 2 tablespoons. Heat the oil then add cauliflower, than onions. Cook until browned than add sauce and turn to low.

I had cooked some rice beforehand taking it off the burner when it was almost done. It continued cooking while I did the cauliflower.

I stopped cooking the cauliflower when the sauce was nearly cooked out. I wanted it cooked through and hot but still firm.

Throughout my life I've never really been crazy about cauliflower. I liked it but it was not on the top of my list of veggies.

Since I've been vegan I have experimented more and more with different food items. Cauliflower turns out to be a very versatile veggie to use. It can be mashed, steamed, made into soup, eaten raw and dipped, eaten raw in salads, eaten as a rice substitute and it happens to be great for main dishes as well.

In the end I was really thankful for the power outage. I was loving the outdoor cooking. I also loved the delicious lunch made super fast without making a mess in my mother in laws' kitchen. I think I will have to get some more butane. These little stove burners are a lifesaver.
