Vegan Blue Corn And Spinach Patties With black Bean Sauce And Sesame Seed Cream
I don't have a kitchen where we are staying in Acapulco, just a burner and a small pot with a steam tray in it. I feel slightly limited in my food preparation.
Last week I bought some blue corn tortilla flour to see if I can put together some oddball snacks.
I came up with a dish made from this special flour, and spinach. The flour was mixed with water then mixed together with chopped spinach. After it was all folded in and mixed, I made patties with it and steamed them in the steamer at a boil for seven to ten minutes flipping them in between.
In the meantime I took some cooked black beans and blended them with a fresh tomato salsa into a sauce. When all of the patties were finished cooking, I heated up the sauce. The sauce was served with the patties and sprinkled with fresh red onions.
I finished it off by topping it with a cream sauce made from ground sesame seeds, lemon juice garlic and water blended in my magic bullet.
That sounds like an amazing dish! I really LOVE spinach and black beans are yummy, too!
If only you had a toaster oven, you could make some homemade tortilla chips/crisps in the oven and dip them in a hummus made with your magic bullet!
