Beet Hummus
Now that I'm vegan I eat a lot of hummus. It's convenient to buy.
I never liked beets much growing up and into my adult years. But I did love my mother's beet tomato soup.
I have been getting into the beet flavored one lately. I knew a Greek guy who was very upset if there was any other flavor other than the traditional.
So today without him knowing, I made my own beet hummus.
I combined a can of chickpeas with tahini, lemon, roasted beets, olive oil dill salt and pepper
Beets are related to swiss chard and it's leaves are consumed as well. It's high in antioxidants and good for cardiovascular health.

I never really liked beets neither, and my mother is from Poland, so she always had her hot beets drink whenever we celebrated Christmas or other Festives. And each year I would take a sip and each year I would disguise it less. Really nice pictures! I am obsessed with Hummus too :-P Resteemed!
