Ensalda de frutos del mar
Ingredientes
250 gramos de pulpo precocido
250 gramos de calamar
250 gramos de colas de langostinos
24 vieiras
1 aji rojo
1 cucharadita de aji picado
Aderezo
½ taza de aceite de oliva
1/3 de tazas jugo de limón
Sal
Pimienta negra
Preparacion
Corte el pulpo en laminas, lave los calamares, límpielos y córtelos en aros, páselos por agua hirviendo 1 minuto y déjelos enfriar. Lave los langostinos, pélelos, quítele el tracto digestivo (la tira negra) y póngalos a cocinar hasta que cambien de color. Limpie las vieiras, lave el aji, quítele las venas y semillas y córtelo en cuadritos.
Para el aderezo, emulsione el aceite y el jugo; condimente con sal y pimienta al gusto. Disponga en una bandeja. Añada el aderezo15 minutos antes de servir y distribuya el perejil por encima
