Steemit Philippines Photography Contest Week #5|Theme: Filipino Food Photography| MAMA'S PORK CALDERETA
A recipe has no soul,You, as the cook must bring soul to the food.
Greetings of good health to everyone in Steemit and to the community,Im @carine1988 and these is my entry to the Photography Contest with the theme Filipino Food.
We Filipinos love food,we like to prepare our foods with simplicity but pleasurable to eat.Our palette is so diverse and each region has different take on foods taste,foods evolves and it usually adjust to the place where it was prepared but above it all nothing bets the flavor we've known and grown up with..the home cooked meals.In these entry I will share my Mothers way of cooking Caldereta,its a must in our families table everytime we celebrate different occasions and festivities.I can say up ro now its flavors never change.
Caldereta is a tomato based stew and originally a Spanish dish which we Filipinos tampered to make it fit our taste buds.Caldereta is one of the many dishes that is inspired by colonizers who invaded our country and we make our own by incorporating vegetables and what is available on our locality.
INGREDIENTS
- Pork with bones
- Potato
- Carrots
- Red bell pepper
- Onion
- Garlic
- Pepper
- Salt
- 5 cups of water
- Pineapple chunks
- Tomato Paste
- Banana Catsup
LETS GET COOKING
Wash meat thoroughly.
Boil the Pork meat.
- In a pan heat oil and saute garlic and onion.
Add the pork meat on the pan,fry until natural oil comes out.
Add 5 cups of water,put star anise afterward.Star anise is used to eliminate unwanted odor of the meat.
- Add sliced carrots and potato,then next is the red pell pepper.
- Add the pineapple chunks.
Then add salt and pepper to taste.
Let it boil so that the flavors would combine.
- Add banana catsup and Tomato paste.
- Let it simmer for more hours until meat tenders and strip off the bones.
....and were done,Calderetas ready to serve!
SIDE NOTES
My mothers pork Caldereta did not not use liver spread because we are not a fan of its taste.
She uses banana catsup instead of Tomato sauce because we love our caldereta more on the sweet side.
She use tomato paste to thicken the consistency of the stew and flavor enhancement.
For me Filipinos are good cooked because food shaped the way we live and every dish prepared and serve is a product of love.
