When I was a little kid, my Mom used to take me to the food market some blocks away from my house, and I was always looking at the women there making mushroom cakies. Foe me it looked more than magical at that time: they used to make them all from scratch and they did it not just amazingly well, but fast too.

They used to use a special type of baking form that was just too heavy for a child to lift and you must have some extra muscles for that... The pan looked exactly the same as this one:

Some days ago I was cleaning my grandma's kitchen and accidentally found a bag which had the same mushroom pan as the ladies in the market. I was so surprised seeing this discovery and felt a bit disappointed that just now I have found out that my grandma had it all this time. Imagine, how many mushrooms I would have baked... Millions...

I took it out and started asking my grandma if she knew a recipe that I could use to try to bake these guys. She took out her all cooking books and we started looking... It took us 30 minutes but we found this amazing recipe:

2 eggs well whisked
150 g sugar + 200 cold butter
flour (to make it as thick as 40 proc. sour cream)
100 ml sour cream + 0.5 teaspoon of baking soda
1 teaspoon of vanilla

From all these ingredients you need to mix thick batter. Preheat the mushroom pan and apply some oil in every single mushroom form. When the pan is hot enough, with clean hands take small bubbles of batter and place them in the forms. It does not need to be perfect, just make sure all the form is covered nicely.

Do not expect first mushrooms to go extremely well, because it is pretty difficult to "discover" or better said, adjust, the right temperature. Try turning over the pan every minute or so. The mushrooms have to be golden, that is when you know they are ready to go.

Let them cool down.

Prepare some nice sugar glaze with a hint of lemon for stem, some poppy seeds for decoration on the bottom and some dark chocolate for the head of mushroom.

Believe me, it takes time to make it well... And it was just my first try today but I think I did great. Wait some weeks and I will be a real pro :)
