Help me plan a fishing trip of a lifetime!

A fishing dream
I have been thinking about planning a fishing trip for some time I have not had the chance since April last year where I tackled the mighty river Ebro in spain after Catfish and Carp.

I would love to do some sport fishing off shore but I am struggling for ideas and species to go for.

The choices I have considered are along the lines of South Florida for Goliath Grouper and Shark, South Africa for Giant Trevally and wahoo.., or how about Thailand for some freshwater Arapaima and then some Sailfish off the coast?
I suppose the trip would have to tie in with a family holiday as I would most certainly be in deep trouble booking that sort of trip without them.

So what do you think, where would you choose if you had the choice or share where you have been and what you caught.
