Pork roll in Irish style

Juicy roast pork stuffed with greens, mustard and apples, which will
decorate any festive table.

2 kg of pork fillet
1 large onion
100 g of butter
5 cloves of garlic
2-3 apples
salt pepper
1 egg
4 sprigs of fresh parsley
2 tablespoons mustard
1 tbsp. lemon juice
2 tablespoons apple jelly
sleeve for baking

Preheat the oven to 180 degrees C.

Rinse pork, make small incisions to make the piece more flat.

Fry the onion and 3 garlic cloves on low heat, peeled and cut into
small cubes. Add the diced or diced apples on a large grater. Add more
oil and fry for about 10 minutes.

The filling slightly cool, add salt, pepper, raw egg and finely chopped parsley.

Prepare marinade: mix apple jelly, lemon juice, 2 tbsp. mustard.
Lubricate a piece of pork marinade from the inside, lay out the
filling, roll up the roll and tighten it tightly with twine. Cover the
top of the roll with the remaining marinade.

Put the roll in a sleeve and put in the oven. The oven is 1.5 hours long.
