Pie with spinach
A delicious and simple recipe for pie with spinach. You can make with
fresh spinach leaves or with a frozen one. Frozen spinach should be
simply defrosted and squeezed properly.
250 grams of fresh spinach leaves, washed, chopped
1 cup of flour (150g)
1 tsp salt
1 tsp baking powder
2 eggs
1 cup of milk (250ml)
100 g of butter, melt
1 onion, finely chopped
200 grams of grated Mozzarella cheese (or other cheese)
Preheat the oven to 190C. Lubricate the baking dish.
Spinach the spinach in a saucepan, add water. Bring to a boil, reduce
heat and cook for 2-3 minutes, so that the spinach will soften, but
not lose a bright green color. Remove from heat, drain water, squeeze
out excess liquid.
In a bowl, mix the flour, salt, baking powder, eggs, milk, melted
butter. Add the spinach, onion and grated cheese.
Transfer to a prepared baking dish. The oven in the preheated to 190 C
oven for 30-35 minutes, or until the toothpick leaves the center of
the cake.
