Chocolate Chip Banana Muffins

First grind some fresh whole grain wheat flour.

Gather all the ingredients together

1 cup Freshly ground flour - or whole wheat flour if you don't have a grinder
1 tsp Baking Soda
½ tsp Baking Powder
½ tsp Salt
3 Tsp Brown Sugar
1 cupBananas - About two medium sized bananas
1 Egg
2 TspOlive Oil
2-4 TspWater - depending on how moist/ripe the bananas are
½ cupChocolate Chips - If you want, the muffins are fine without

In a bowl, mix together the dry ingredients.
Flour, Baking soda, Baking Powder, Salt & Brown Sugar.

Slice up the bananas.
And then fork them into mush.

Add the egg and oil to the bananas and mix them good.

Grease your muffin pan
And preheat oven to 350°

Then blend the wet ingredients into the dry ingredients.
Add about two tablespoons of water so that the mixture is nice and mushy. You may need more if the bananas were a bit on the green side.
Last, mix in the chocolate chips
And then scoop batter into muffin pan.

Bake at 350° for 15-20 minutes. Until golden brown and the insides are no longer mush

Serve fresh out of the oven with butter.
(These also keep rather well and are moist and tender to eat even without reheating or butter.)

I've never tried making them with banana before - I will need to try this.

Banana keeps the muffins from becoming hard and dry.
So they are always moist tasting.

Also, its a great thing to do with any over-ripe bananas you have sitting around.
