Chicken Avocado Spring Rolls

This spring roll recipe came about as a mistake from Walmart's pickup service. I ordered a package of won ton wrappers but I was given spring roll wrappers instead. They didn't even tell me there had been a substitution - I guess the clerk filling the order didn't know the difference between won tons and spring rolls! I've never used these wrappers or made spring rolls before, but what the heck, I decided to give it a try.

The recipe was SUPPOSED to be Philly Chicken Won Ton rolls.

For the filling I started out with rotisserie chicken breast separated from the skin and the bone and put into the blender container.

Next, I cut up green and red peppers and onions and sauteed them until tender in a small amount of olive oil.

I added the sauteed veggies along with a cut-up avocado to the blender.

Pulse the ingredients together until everything is well mixed and chopped to the consistency of chicken salad. The avocado takes the place of using mayonnaise, which is healthier and has a great flavor. I added seasoning salt and a teaspoon of Thai red curry paste.

Next comes the task of rolling out the spring rolls. The instructions on the package said to soak them in warm water for 15 seconds to make them pliable. Here is where my lack of expertise came into play. I put all five of the wrappers in the warm water at once. What you SHOULD do is put one in at a time. Soften it up and pull it out of the water and finish it before putting in the next wrapper in the water to soften. So learn from my mistake!

Put the desired amount of filling in the center of the wrapper.

You want to fold over the right side, then the left side, then fold the bottom side up over the filling. Follow up by rolling the entire roll upward to the end of the top edge.

I followed up by putting the rolls in my air fryer for 5 minutes, but you could use your oven as well. Just enough to warm them up.

Due to my incompetence with softening all the wrappers at once, I ended up with the remaining wrappers being stuck together and tearing when I tried to separate them. So I used the pieces to make smaller rolls of varying sizes. This just goes to show that you can cut the wrappers into smaller pieces if you want smaller rolls!

All in all, I was very happy with the finished product, though I'm glad that I wasn't making these for guests that I wanted to impress. But the recipe worked out well, the rolls were very tasty (my husband loved them), and I will definitely make them again. With prettier results, I'm sure.

Oh, but these looked good!!! Sometimes mistakes turn out to be the best thing that ever happened to me.

Now, I probably wouldn't have bought them either, but, after looking, yum! Yum!
