INGREDIENTS
- 1 medium zucchini
- 1 small carrot
- 1 cup cornmeal
- 1 egg.
- Coriander and chives to taste.
- Salt.
- Oil.
PREPARATION
- Wash, peel the zucchini and carrot. Grate the zucchini and carrot on the thin side. It is advisable to leave the zucchini for a while to discard the liquid. Chop the cilantro and chives.
- In a cup add the cornmeal, the well-drained zucchini, the carrot, the egg, coriander, chives and salt. Knead until all the ingredients are compacted, there is no need to add water because the zucchini provides the liquid.
- Make balls of the same size, then shape the arepas.
- Heat the oil, fry on both sides, remove and place the arepitas on an absorbent napkin to remove excess fat.
