Who Knows What These Little Cakes Are?

If you are an Aussie or a Kiwi you will know for sure, but the rest of the World I'm not so sure...It's a simple delicacy that is found at every kids party, school fete, or Summer BBQ.


Lamingtons

Lamingtons are a uniquely Australian cake, and like most good Aussie food, they are pretty simple, nothing fancy here. Lamingtons are made from cut squares of sponge cake which is then coated in a layer of chocolate sauce (this gets messy making them) and then the chocolaty sponge is rolled in desiccated coconut. The resulting combination is then left to set, and is surprisingly delicious.

HOW THEY GOT THEIR NAME

Legend has it that this dessert was named after Lord Lamington who was the Governor of Queensland (my home state) between 1896 and 1901. Apparently he called upon his chef to whip up a treat for some unexpected guests, and these were the ingredients he had in the kitchen. It proved so popular that it was requested again.
